This Caturra coffee from Colombia has undergone a thermal shock process after picking where the coffee cherries in a controlled method undergoes a rapid heating and cooling that dramatically effects the final flavor. In this instance it has a strong strawberry aroma that when roasting gave me nostalgic aromas of a strawberry toaster pastry. These berry aromas are melded with the herbal notes that are reminiscent of hibiscus tea. In the cup the flavor is very delicate was an almost tea-like body complemented by a medium to low acidity that finishes very clean. I get notes of berries and fruit tea with an undertones of chocolate.
