This Red Bourbon coffee was produced by Wilton Benitez at Granja Paraiso 92 in Colombia. It has a bright and fruity aroma that is reminiscent of early summer berries, which carries all the way through from grind to pouring a fresh cup.  This coffee has medium acidity with a clean finish and the berry notes carry over from the aroma into the flavor. As it begins to cool notes of bakers’ chocolate begins to emerge to add depth and richness.

Embrace the Grey: A Caturra Thermal Shock from Colombia

This Caturra coffee from Colombia was produced by Sebastian Ramirez and has undergone a unique process called thermal shock. After picking the coffee cherries they are placed in a controlled environment where the cherries undergoes a rapid heating and cooling that dramatically effects the final flavor.  In this instance it has a strong strawberry aroma and when roasting these beans gave me nostalgic aromas of a strawberry toaster pastry.  These berry aromas are melded with the herbal notes reminiscent of hibiscus tea.  In the cup the flavor is very delicate and had an almost tea-like body complemented by medium-low acidity that finishes very clean on the pallet.  I get notes of berries and fruit tea with an undertones of chocolate.

Savoring the Sunset: A Field Blend From Honduras

This field blend from Honduras was produced by Clementino Ramirez and is a very approachable coffee. It has a flavor profile of sweet fruit, nuts and milk chocolate. This coffee was roasted closer to the medium end of a roast to accentuate the natural sweetness found in the coffee and will give you a very clean coffee with low acidity.
